Basically a good old fashioned boneless skinless chicken breast gets a major makeover by being stuffed with a simple mixture of crisp apples creamy cheese and a few other helpful ingredients. Simmer for 15 to 20 minutes or until chicken is no longer pink. Although the original recipe calls for flattening the chicken topping and then rolling securing with a toothpick i avoid flattening chicken whenever necessary. Cover and simmer for 15 20 minutes or until chicken juices run clear. Divide apples among chicken breast halves.
Flatten chicken to 1 4 in. Add wine and 1 4 cup water. Stir apple juice and sherry or additional juice into pan stirring to loosen any browned bits. Roll up and secure with toothpicks. Bring to a boil.
Place in an 8 in. Add wine and water. Place chicken breast halves between 2 pieces of waxed paper. This is a great dish for the fall. Melt butter in large frying pan over medium heat and brown the stuffed chicken breasts.
